The Faces Behind Embers

Rooted in Family, Driven by Passion

We are proudly family-owned and operated, with Executive Chef James Van Dyke at the helm. James is supported by his wife Delphine and his in-laws, David and Elise, who have been long-time residents in Provo. And heading our service team is Edwin Ayala, a highly skilled mixologist with a charming personality. Edwin’s journey has taken him from the ciudads of Mexico to the mountains of Montana, and now he brings his expertise to Embers.

Passion is at the core of our team, dedicated to our craft and committed to making Embers the best restaurant in Turks and Caicos. We believe that delighting the senses and creating a five-star dining experience is an art form. We pay careful attention to every detail, from the aesthetics of our space to the meticulously crafted flavours and creations on offer. Our goal is to foster an environment that not only delights the senses but also arouses them, leaving a lasting impression.

Our Chef

The Journey of James Van Dyke

Chef James discovered his passion for cooking at just 13 years old, beginning his career as a dishwasher in Washington State before graduating from Le Cordon Bleu in Portland, Oregon. After refining his craft in Michelin-starred restaurants in Chicago and leading luxury resort kitchens throughout The Bahamas, he made Turks & Caicos his home in 2017.

Driven by a passion to create something truly different for the islands, James and his wife, Delphine, founded Embers—a boutique restaurant built around exceptional hospitality, open-fire cooking, and an unforgettable dining experience. His vision continues to push the culinary scene forward while celebrating the very best ingredients and craftsmanship.

Our History

Island Roots & A Shared Dream

When David and Elise Harsthsorn moved to Turks & Caicos in 1981, they never imagined the islands would become their lifelong home. After raising their family in Providenciales, their dream of owning a restaurant and bar finally became a reality with the opening of Embers.

Together with James and Delphine Van Dyke, they created a boutique dining destination centered around live-fire cooking, handcrafted cocktails, and genuine hospitality. At Embers, our goal is simple: to make every guest feel like family. Whether you’re celebrating a special occasion or simply enjoying a night out, we hope you’ll leave with lasting memories—and a reason to return.
